Welcome to Emma's foods! Parmesan Chicken

Hi everyone, I'm Emma, Lucy's owner.  I have started a blog where I will share the meals I make and some tips with you!  Here is my first recipe:

Parmesan Chicken Dinner:
Ingredients: 

  • Skinless, boneless chicken breast cut into strips
  • grated or shredded Parmesan cheese
  • Italian breadcrumbs
  • 1-2 eggs
Prep: Preheat the oven to 350 degrees F and spray a casserole dish with a little olive oil
Bake strips until golden brown.  I opened the oven and sprayed a little olive oil a few times throughout the cooking because I didn't want the chicken to get too dry.

Vegetables:

  • Zucchini squash
  • Apple
  • Half an onion
For the vegetables, I just sauteed them in a little olive oil until they were golden.  You can also bake them as a casserole.  I think they were good to pair with the chicken.

Potatoes:

  • Potatoes, rinsed and peeled
  • Scallions, chives, sour cream, and any other topping you would like
You can mash the potatoes with a fork so they are easier to beat.  Sour cream makes the potatoes really smooth and adds a richer flavor.


Dessert: For dessert I made ready to eat cookie dough (delicious!)

  • 2 cups sugar
  • 1/2 cup flour
  • 1/4 cup brown sugar
  • 1 tbs vanilla extract
  •  1/4 cup softened butter
  • water to taste (Whatever consistency you choose)
  • Chocolate chips
  • Mix the sugars and butter in a medium mixing bowl.  Add the flour to the mixture.  Add all of the other ingredients, water being last.  I thought it was a little sticky and added more flour.
